It’s Sunday! Time to get the blender going and make a nice smoothie. This week I thought I’d try an Avocado Vanilla Smoothie. Avocado’s are my favourite fruit, not because I would marry an avocado if I could but because of their many health benefits and delicious buttery taste. Research has found that certain nutrients are absorbed better when eaten with avocado. In a study, when participants ate a salad with avocado, they absorbed 5 times the amount of carotenoids (a group of nutrients that includes lycopene and beta carotene) than those who didn’t eat the avocado. Not only do they taste amazing but they’re filled with Vitamin E, glutathione, high in beta-sitosterol, and are great for preventing cancer and heart disease.
Avocado Vanilla Smoothie
1 ripe avocado
1 frozen banana
1 cup of coconut milk/raw milk
1 tsp of natural vanilla extract
